WINEMAKING
As a result of years of observation and tasting of the different qualities of grapes from our vineyards, Bilduma emerges. The Hondarrabi Zuri comes from the upper areas of the “Izarre” plot, with a 26% gradient slope, encouraging the leaching of nutrients and
thus favouring the quality of the grapes. Poor soils translate into more balanced and lowyielding plants and thus higher quality wines.
TASTING NOTES
COLOUR: Pale yellow, clean, pure and
bright..
NOSE: Notes of white fruits together
with small mineral touches, intense and persistent. A wine for ageing, unctuous on the palate.
PALATE: An unctuous and complex mid palate with a pleasant sensation of fruit and mineral touches that gradually gives way to a balsamic finish with a pleasant saline touch.

VINIFICATION
Manual harvest in boxes of 20 kilos. The grapes are harvested when the skins and sugars are fully ripe. After destemming, the grapes are cold macerated for three days before fermentation. Malolactic fermentation in French oak barrels and ageing for 26 months in the same barrels (10%) and in deposits (90%).
