A gastronomic menu made entirely with seasonal and locally sourced products, purchased directly from local markets or nearby producers.

The menu features a generous selection of appetizers, fish and meat as main courses, and desserts. This menu will be paired with our white and rosé txakolis. By ROBERTO RUIZ

APPETIZER

  • Gilda skewer with Ibarra pepper, Cantabrian anchovy and olive.
  • Fresh anchovy in vinaigrette.
  • Tolosa beans.
  • Cod cheeks in pil-pil sauce.
  • Ham croquettes.
  • Grilled Olano txistorra sausage.
  • Traditional-style tripe.

MAIN COURSE

  • Traditional fish terrine.
  • Grilled coastal baby squid.
  • Cod loin with “zurrukutuna” sauce.
  • Boneless roasted Lumagorri farmhouse chicken with seasonal vegetables.
  • Homemade bread torrija, custard and ice cream.

DRINKS AND EXTRAS

  • HIKA Txakoli (Xirimiri white and rosé), Bread, Insalus Water and Coffee.
