COLOUR: Straw yellow, clean and bright.
In the mouth: Surprising fresh attack and with a great volume and length. Honeyed notes, with a persistent and unctuous memory.
AROMAS: Intense, fresh white fruit notes together with vanilla, toast and balsamic aromas provided by the barrel fermentation and its later ageing on lees. Great Fineness and Complexity.
After the selection in the field of the grapes with the best organoleptic quality and the best balance of acidity and ripeness, the must is cold macerated with its skins for 8 hours before pressing. Must is debourbaged and it begins its fermentation in French oak barrels with a capacity of 225l. After its fermentation and during the next 11 months the wine is aged on its lees with a daily batonnage to put the lees in suspension and thus favour its ageing.
