An excellent sparkling made from hondarrabi zuri showing a flinty, mineral verve to the smoky lemons. Expressive and tangy on the palate with fine salinity and a nervy, focused finish. Very engaging. Drink now.

A super zingy and bright blend of Hondarrabi zuri and chardonnay showing a nuanced creamy overlay to the flinty lemons. Tangy and bone-dry on the palate with medium weight and a fresh, laser beam of acidity. Drink now or
hold.

Fresh, brambly fruit with a hint of white pepper and vanilla.
Fluid and medium-bodied palate with soft tannins and fresh, medium acidity. Some oak tannins here, but well-integrated. A well-balanced expression. Vegan. Drink now.

Super bright and linear on the palate with a mineral, briny note to the limey citrus, nectarines and peaches. On the palate, the piercingly high acidity tears up the flavors, giving a razor-sharp mouthfeel and a pure, mouth-cleansing finish. Excellent for acid freaks.
So much energy! Pretty gastronomic, but this would be better if there was a tad more intensity in the center palate.
