WINEMAKING
Pre-fermentative maceration during 3 days.
FERMENTATION: in 1.000 kilo deposits.
AGEING: 15 months in French oak barrels of 225l and 500l.
TASTING NOTES
COLOUR: intense, brilliant and clean ruby red.
NOSE: Notes of red fruits (such as plum), along with spicy notes. They are complemented by notes of dried, toasted and balsamic fruits provided by barrel ageing. Great finesse and complexity.
PALATE: Surprising fore palate, fresh and light but well-structured with a good finish.
VINIFICATION
Manual harvest in boxes of 20 kilos. The grapes
are harvested when they reach the full ripening of skins and sugars.
After destemming, the grapes are cold macerated for three days before fermentation.
Malolactic fermentation in French oak barrels and ageing for 15 months in the same barrels.
